A recent study that was published in the Journal of Agriculture and Food Chemistry shows that sprouted garlic has five times more antioxidants that fresh garlic.

According to Dr. Jong-Sand Kim, the author of the study, plants become very sensitive to viruses, bacteria and insects when they are sprouting making them produce phytoalexins that offer strong protective effect. Most of them, though harmful to insects and microorganisms, are beneficial for human health.

Garlic has significant health benefits, be it in its fresh or sprouted form. It contains healthy sulfur compounds, such as allicin. According to several studies, these compounds can potentially slow down atherosclerosis as well as decreasing the risks of some cancer types.
